1 medium sweet onion
1 medium sweet potato
1 lb carrots
2 14-oz. cans of coconut milk
1 TBSP cumin
½ tsp chili paste
2 cloves minced garlic
1 tsp fresh grated ginger
2 TBSP fresh lime juice
Step (1) In a big pot, sauté onions and carrots together until soft.
Step (2) Then, add in the sweet potato and all other spices.
Step (3) Next, add in both cans of coconut milk and lime juice.
Step (4) Slowly stir until everything is soft.
Step (5) Finally, transfer the soup into a blender, blend and enjoy!
